Lemon Ricotta Pancakes

Mix in bowl:


2, 1/2 cups flour (I used 1/2 cup wheat)
2 T sugar
1 tsp baking soda
1 tsp salt

Add and mix:


1, 1/2 c buttermilk
2 eggs
1/2 cup ricotta cheese
zest of 1 lemon (I used 2 drops essential oil)

To keep with the lemon flavor I made buttermilk syrup and added lemon oil to it as well. These turned out really fresh and yummy!
