Snickerdoodle Blondies



My friend MariLee found this recipe on Pinterest and made these for a ward function. They are amazing!

Mix:

2 c brown sugar
1 c butter, room temp
2 eggs, room temp (I just used mine straight from fridge)
1 T vanilla

Add:

2, 2/3 c flour
2 tsp baking powder
1 tsp salt

Pour and mold into greased 9x13 pan. Then mix and sprinkle on top:

2 T sugar
2 tsp cinnamon

Bake at 350 for 35-40 minutes

cut while warm

So chewey!

Granola Bars


Spray 9x13 pan and line with foil or parchment.

On a cookie sheet bake at 350 for 10 minutes. Stir a couple times:


2 c oats
3/4 c almonds

Add to the toasting oats and bake another 2 minutes:

1/2 c coconut
1/4 c flax seed

Meanwhile on the stove top heat and melt:


1/2 c honey
1 c peanut butter
2 tsp vanilla
1/2 tsp salt
1 cup chopped dates
1 cup chopped raisins

Add the toasted oat mixture to the hot peanut butter mix. Mix and press into the pan firmly. Let cool.

Cut the bars. I like to keep the bars in the fridge in an airtight container. They are easier for children to handle when they are cold. They hold their shape a little better.

Oatmeal Raisin Cookie Larabar


In a food processor processor chop:

1 cup rolled oats

Add and process for a couple minutes:


1, 1/2 cup raisins
1 cup walnuts
1/4 tsp salt
1/2 tsp vanilla



Shape into whatever shape you want. The kids liked round balls because it looked like cookie dough.

Pumpkin Bar

This is such a yummy alternative to brownies!
Mix:

2 cups flour
1, 1/2 cup sugar
2 tsp baking powder
2 tsp cinnamon
1 tsp baking soda
1/4 tsp salt
1/4 tsp ground cloves

Add and mix:

4 beaten eggs
16 oz can pumpkin
1 cup oil (or applesauce)

spread in UNgreased cookie sheet. Bake at 350 for 20-30 minutes. Cool 2 hours. Frost with cream cheese frosting.

Cream Cheese Frosting
Mix:
8 oz cream cheese
1/2 cup butter

Add:
1 tsp lemon, almond or orange extract
2 cups powdered sugar

School Lunch Peanut Butter Bars

Remember these? We use to call them Congo bars back in elementary school. This was back in the day when lunch ladies actually MADE the food by HAND. Remember those big mixers? These peanut butter bars taste just like them. So many memories...

I found this recipe at ourbestbites.com

Cream:

1 cup butter
1 cup sugar
2 cups brown sugar


Now Add:

1, 1/2 cups peanut butter
2 tsp vanilla

Now add:

3 eggs, one at a time


Now add:

3 cups flour
1, 1/2 tsp baking soda
1/2 tsp salt

Now add:

3 cups oats (I used 2 cups whole oats and 1 cups oat flour)

Press into greased cookie sheet. Bake at 350 for 13 minutes. While it cooks make your fudge frosting.


In a mixer dump:

4 cups powdered sugar
1/2 cup cocoa powder
1/4 tsp salt
1/3 cup butter, soft
1/3 cup boiling water
1 tsp vanilla

When the pan of peanut butter bars comes out of the oven drizzle them with 1/3 cup melted peanut butter. Then spread the fudge frosting. Cool slightly and then cut up!

Chewey Granola Bar

These are my new favorite granola bars! They are chewey and soft and hold their shape really well. I was a little skeptical if they would ever firm up. When you take them out of the oven they are really soft. I waited 2 hours and they felt like they would be too flimsy and sticky to handle. But I let them completely cool for about 5 hours and they were great! I would suggest that you score or cut the granola bars after they have cooled for 2 hours and then just leave them to finish cooling in the 9x13.

In a large mixing bowl combine:

2 cups oats (I used old-fashioned)
1 cup sliced almonds
1 cup coconut
1/2 cup wheat germ (found by the syrup)
1/2 cup cranberries
1/2 cup chocolate chips
1/2 cup dry dates (found by raisins)

In a microwave safe bowl combine:

2/3 cup honey
1/4 cup brown sugar
3 T butter
1, 1/2 tsp vanilla extract
1/4 tsp salt

Microwave the honey mixture on high for one minute. Mix with a spoon. Then microwave for another minute. Mix again and poor over the dry oat mixture. Mix with two large wooden spoons. The chocolate chips will melt slightly. That's ok.

Dump the mixture into a greased 9x13 pan. Press down and even out the best you can. Bake at 300 for 30 minutes.

Try making this at night and let cool over night. Cut and serve in the morning with juice or milk!

Granola Bars


These are a bit crumbly. Hubby likes to crumble these in a bowl and pour milk on top.

Cream for 2 minutes:

1 cup brown sugar
1/2 cup butter

Add and mix:

2 T honey
1/2 cup peanut butter
1/2 tsp vanilla
1 egg


Add and then mix quickly:

1, 1/3 cup wheat flour
1 tsp cinnamon
1/2 tsp baking soda
1 tsp salt
1, 1/2 cup rice crispies
1, 1/2 cup old fashioned rolled oats
1/2 cup chocolate chips
1/2 cup coconut
1/2 cup craisins or raisins
1/2 cup sliced almonds

press mixture into greased cookie sheet. Bake at 350 for about 22 minutes. Cool on top of stove.
