Apple Crisp

This will probably be my last post for a while. I'm getting really tired. Baby #5 will be here in the next few weeks. I'm hoping to be back in the kitchen this fall.

Cut up and place on the bottom of a 9x13 buttered casserole dish:

8 green apples

Mix together with pastry cutter, or in mixer:

1 stick cold butter
3/4 brown sugar
1/2 cup flour
1 tsp cinnamon
1 tsp nutmeg

Add 1/2 cup at a time:

2 cups oats

Spoon topping over cut apples. Bake at 375 for 30 minutes uncovered.

Teddy Graham Parfait

Sandwiches can get old real quick! Here is a creation the kids and I came up with for lunch today. It tastes awesome! You could use this idea for a snack or even dessert.

Layer:

vanilla yogurt
fresh blueberries
fresh cut strawberries
Honey Teddy Grahams

Honey Lime Fruit

This is a summer favorite! I like to layer the fruit instead of dumping and mixing. If you dump and mix the fruit then you may end up with  bruised bananas and browned kiwi. Before you layer your fruit give the sliced banans a lemon bath! Just fill a bowl with lemon juice (bottled) and then dump your bananas in gently. Scoop out with slotted spoon.

Layer:

1 banana
4 strawberries
1 kiwi
handfull of blueberries
Honey Lime Dressing

then layer 2 more times! (3 bananas altogether)

Honey Lime Dressing:

3 T honey
1 lime juiced

Breakfast Fruit

This is more of an idea than a recipe. I say the more ideas you have the more you can make something out of nothing. The idea is it's better to know how to do a hundred things with potatoes than just three things. If you are versatile, then any time you have a potato in the kitchen you've got yourself a home cooked dinner. Grocery money has been slim this week since I cheated and bought a few things using my food budget. I found an apple and some kiwis in the back of the fridge. Here was breakfast.

Chop finely:

1 apple
2 kiwis

In a small bowl mix:

1 T lemon juice
2 T honey

Pour lemon mix over fruit. Enjoy!

Green Smoothie


I did another experiment with baby spinach and thought this smoothie was really yummy!


In a blender mix:


6 ice cubes
1, 1/2 cup milk
1 banana
1/2 cup strawberry yogurt
1 cup spinach
1 cup frozen fruit mix (peach, mango, pineapple, strawberry)

2 T sugar

Apple Crisp


Apple crisp can be made with *fresh apples or dried apple slices. This is a good way to rotate through your food storage as well!

I came up with this recipe this afternoon as a challenge from my Dad. This one's for you!

In a large bowl combine and let sit for 5 minutes:

7 cups dried apple slices
3 cups boiling water

Combine the following and mix for 2 minutes:

1/2 cup butter
3/4 cup brown sugar

1/2 cup white flour
1 tsp Cinnamon
1 tsp nutmeg

Now add 1/2 cup at a time:

1, 1/2 cups old fashioned rolled oats

Now dump the apple slices in your 9 x 13 baking dish. No need to grease the dish. Drain off any excess liquid. Now top with granola topping.

Bake uncovered at 375 for 30 minutes. Serve with vanilla ice cream...note to self: Buy vanilla ice cream!
*for fresh apples just use 8 green smooth-bottomed apples. cut them up. I like to "cube" them rather than slice them. No need to peel the skins. Leave 'em on!

Blueberry Parfait

This is more of an idea than a recipe. I whipped together when I had a sweet tooth but didn't want to bake. "Necessity is the mother of all inventions" right! This isn't anything you haven't tried before. It just helps to be reminded sometimes.

Throw together in a cup the following:

Handful of Fresh blueberries
1/2 cup vanilla yogurt (or more!)
granola cereal
