Raspberry Butter

I don't have a picture to go with this. But it was easy and yummy!

Raspberry Butter

Mix on high until combined:

1 cube butter
1 cup honey
1 tsp vanilla extract
1/2 - 1 cup  raspberry jam




Ruby's Wheat Bread

I have been making this bread for the past year and really like it. It's a combination of several different recipes. The carmel butter recipe is under Monkey Bread.

In your mixer combine and mix and sit for 15 minutes:

2 1/2 cup warm water
1, 1/2 T SAF yeast
2 cups wheat mixture

After the mixture sits for 15 minutes add:

1/3 cup honey
1/3 cup oil
1, 1/2 T vital wheat gluten
2, 1/2 tsp salt
1 cup oats
1 cup wheat mixture
2 cups white bleached flour
3 T Millet
1/2 cup sunflower seeds

Mix for 7 minutes. Let rise for 1 hour. Form loaves. Let loaves double in size. Bake at 375 for 30 minutes. Makes 2 loaves.

***My wheat mixture is simply one half soft white wheat and one half hard red wheat.

New Bread Trick

I tried something new when I made my wheat bread this week. Instead of letting the bread rise an hour and then letting the loaves rise on the counter I preheated the oven to 170 while I mixed the dough. When the dough was done mixing I put them into greased tins and turned off the oven. Then I put the loaves straight into the warm oven for 25 minutes. Then after 25 minutes I turned the oven to 350 and just LEFT THE LOAVES IN THE OVEN for another 30 minutes. They turned out moist and delicious and cut a lot of time off the baking process. Give it a try!

Biscuits and Gravy

My friend Courtney introduced me to the cook book The Food Nanny. It is the cutest cook book! It is so much more than a recipe book. It talks about meal planning and shopping. Everything this lady talks about is more support to how I like to do things...so of course I love it!

I just tried this recipe of hers and it is gooooood!! I used the buttermilk biscuit recipe I just posted below here.

For the gravy

In a medium sauce pan brown:

8 oz maple flavor bulk sausage (I like Jimmy Dean)

In a separate sauce pan melt:

1/4 cup butter

using a whisk add:

1/3 cup flour
1 tsp salt
pepper

Mix the flour long enough that it darkens a bit. About 1-2 minutes. Then add slowly:

2 cups milk
1 cup water

Keep whisking. Don't leave the stove to do dishes or change a diaper :)  Keep the whisk moving until it bubbles and thickens. Then add the drained sausage and serve over hot biscuits with fresh fruit!

Buttermilk Buiscuits

These are the BEST buicuits I have ever had. They really do melt in your mouth. Do not substitute the ingredients. I found this recipe from sisterscafe.blogspot.com. I ate about 6 of these before stopping to take a breath. :-)   This is the only recipe I've ever actually measured flour the way you are suppose to. You know, you spoon the flour into the measuring cup and then level with a knife.

In a mixing bowl dump:

2 cups flour
2, 1/2 tsp baking powder
1/2 tsp salt

Use a pastry cutter to add:

5 T cold butter

Use a fork to fluff in this mixture:

3/4 cup buttermilk
3 T honey

Place the dough on a floured counter. Roll gently into 1/2 inch thick 9 inch by 5 inch rectangle. Then fold in half to make a square. Then roll out to another 9 inch by 5 inch rectangle. Then fold in half and use your hands to gently pat into a 3/4 inch thick circle. Cut 14 buiscuits.

Bake at 400 for 12 minutes. Serve hot!!

Shredded Beef Navajo Taco

Cook and shred one beef chuck roast. I like to cook mine for about 7 hours at 280 in a stainless steel pot with a tight stainless steel lid.

Add to the shredded beef:

1 can green chilis
1 tsp cumin
1/4 tsp salt
1/4 tsp pepper
1 clove garlic, chopped
1 cup salsa
1 T chili powder
2 T brown sugar

Serve on scone with cheese, lettuce, tomato, and Cilantro Lime Dressing

Cilantro Lime Dressing:

In a blender blend:

1 cup ranch dressing
1/4 cup cilantro
1 sprig green onion
1 lime juiced
1/4 cup salsa
salt and pepper

For the scones I use my mom's bread recipe. Click here. I take the dough and cut a small portion and form a flat round in my hand. Then fry the dough for a couple minutes on each side. Allow the dough to cool on a paper towel.

Whole Wheat Muffins

I found this recipe from the sisterscafe blog. Of course. I get most of my muffin recipes from them. This muffin is so sweet it tastes like dessert. My children loved them!

This is also a good substitute for rolls if you don't have time for a yeast rising bread.

In mixing bowl combine:

1/2 cup oil
1 egg
1 tsp vanilla
1 cup milk
1 cup brown sugar

add:

2 cups whole wheat flour (fresh ground)
1/2 tsp baking soda
1/2 tsp salt

I like to use cupcake wrappers but you could just grease your cupcake tin.

Bake at 350 for 20 minutes.

Clover Rolls



Happy Easter everyone! This roll idea is a fun change from the round roll I usually do. Just make three balls out of the dough and place inside a greased muffin tin. Let them raise for an hour and then bake at 375 for about 15 minutes. Brush with butter while hot. You will want to remove from muffin tins as soon as they come out of the oven so they don't get soggy from sweating.

Gingerbread Scones



For those of you who follow me on my home blog, you may have already seen this recipe. I found it years ago in a Better Homes and Gardens magazine. I make these every December. They are yummy for breakfast, snacks, or dessert.

In a large mixing bowl combine:

2 cups flour
3 T brown sugar
2 tsp Baking powder
1 tsp ground ginger
1/2 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon

Add and cut into flour mix using a pastry cutter:

1/4 cup cold butter

Mix in a small bowl:

1 egg yolk
1/3 cup molasses or honey (I've tried both. Honey gives a lighter taste. Molasses gives a stronger flavor)
1/4 cup milk (1 cup water, 3 T powder milk)

Pour the wet mixture into the dry mixture. Combine with a fork. The mixture may seem dry. Knead on floured counter about 5 times. Pat into a 7 inch circle. Cut 8 wedges. Arrange on ungreased sheet 1 inch apart. Bake at 400 for 12-15 minutes.

Serve with whipping cream:

1 pint heavy whipping cream
1/4 cup sugar
1 tsp vanilla


beat the above for about 4 minutes on high

Dinner Biscuit



This is a great recipe for nights you don't have time for dinner rolls. Or when you just found out you are having company. Bring out a couple of cans of soup and add these homemade biscuits for a warm dinner.
 
Combine in a large bowl:
 
2 cups flour
1 cup wheat
4, 1/2 tsp baking powder
1/2 tsp salt
2 T sugar
3/4 tsp cream of tarter
 
Add and cut into flour using pastry cutter:
 
3/4 cup cold butter (Cut until it looks like cornmeal)
 
Add and stir briefly:
 
1 egg
1 cup milk (I use 1 cup water, 3 T powder milk)
 
Knead the crumbly dough on floured counter quickly (you don't want to warm it with your hands). Pat the dough into a 1 inch thick slab. You can then cut the slab into squares (like you would brownies). Or you can use a buiscut cutter. I just cut squares with a knife and place on a buttered cookie sheet. Bake at 450 for 12-15 minutes.
 
Serve with butter and jam.

Cinnamon Raisin Bread

In your mixer or stainless steal bowl dump the following ingredients in order:

4 TB SAF instant yeast (Macy's and Bosche stores carry this)
2 cups hot water (think steamy bath!)
6 TB sugar
2 TB salt
1 cup oil

2 cups wheat flour
1 cup oat flour
7 cups white flour
2 TB vital wheat gluten (can be found at Walmart by the baking powder

Now mix by hand for 15 minutes or turn on your mixer on low for 10 minutes

Now let the dough rise in the bowl for 60 minutes. Punch it down every 10 minutes. I like to set my timer so I don't forget. ;)

Divide into 4 pieces. Roll each piece out in a 7x12 inch rectangle. Butter with 1 T butter. Sprinkle 1/4 cup brown sugar and 1/4 cup raisins.


Now fold the outer edges in 2 inches, long ways.


Now roll up the rectangle like a sleeping bag.


When you get to the end pull the edge up and pinch to seal.




Lie the loaf in your greased pan. Let rise for 30 minutes. Then bake at 375 for 30 minutes. Let cool for at least 1 hour.

Whole Wheat Bread


This recipe is my staple. It came with my Nutrimill Grain Mill.

In your mixer or in a large bowl combine and let sit for 15 minutes:

2, 1/2 cups warm water
1, 1/2 TBL SAF instant yeast
2 cups wheat

After 15 minutes dump into the bowl:

1/3 cup oil
1/3 cup honey
1, 1/2 TBL Vital Wheat Gluten (found by the baking powder in Walmart)
2, 1/2 tsp salt
4 cups wheat

knead for 10 minutes. If you are mixing by hand mix for two 15 minute increments.

No need to let the dough rise. Just form 2 loaves in greased bread tins. Let the loaf rise for an hour. Bake at 375 for 30 minutes. Remove hot bread from tins immediately. Allow to cool at least one hour. I don't recommend serving wheat bread hot. The gluten strands are very fragile because of the weight of the wheat. Your bread will be mushy and taste undercooked. Serve the loaf bread cooled. Soft and moist!

Whole Wheat Chocolate Chip Scones


These scones marry the best of chocolate chip cookies and hot biscuits. These are really yummy! I found the recipe at thepioneerwoman. I used my mixer for this recipe. My mixer has a lid. I wouldn't recommend it if yours doesn't have a lid. You could also use your hands and a pastry cutter.

In mixer dump:

1, 3/4 cup flour
1, 3/4 cut wheat flour
1/4 cup sugar
1/4 cup brown sugar
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt
2 TBL flax seed, milled
4 T oats

Add and using cookie paddles mix on high for one minute:

6 TBL cold butter, cut into 6 pieces


Now add to the mixer and mix on high for only 5 to 10 seconds:

1 egg
*1 cup buttermilk
1 tsp vanilla
3/4 cup chocolate chips


Now dump the dough onto floured counter and mix a couple times by hand until all incorporated. Make a ball and cut in half like so



Now make a circle out of each half. Cut each circle into 6 pie shapes. Like so

Place pieces onto greased cookie sheat. Bake at 375 for 20-22 minutes. Next time I make these I think 1 tsp cinnamon would be a nice touch!

*I didn't have buttermilk. I poured 1 TBL lemon juice in my cup and then filled it to the 1 cup line with milk from the fridge.

Multi-Grain Cran Muffins

In a large bowl mix the following:

1 cup milk
1/3 cup oil
1 egg

Now dump this into the bowl as well and whisk until combined:

1 cup white flour
1/2 cup wheat
1/2 cup oat flour
1/2 cup sugar
3 tsp baking powder
1/2 tsp salt
1/2 tsp cinnamon

Now fold the following into the batter:

1, 1/2 cup chopped cranberries, frozen. (I buy several bags at Christmas time and throw them into the freezer. From the grocery bag straight to my freezer. You can just throw the frozen berries into your food processor when you are ready to bake.)

bake at 400 for 15-18 minutes

French Bread



In your mixer or stainless steal bowl dump the following ingredients in order:

6 TB sugar
2 TB salt
1 cup oil
10 cups flour(2 can be wheat)
2 TB vital wheat gluten (can be found at Walmart by the baking powder

Now mix by hand for 15 minutes or turn on your mixer on low for 10 minutes

Now let the dough rise in the bowl for 60 minutes. Punch it down every 10 minutes. I like to set my timer so I don't forget. ;)

Divide into 4 loaves. Slash the tops. Let raise until doubled in size -about 30 minutes. Bake at 375 for 30 minutes.

Bread Sticks

I use the same recipe for my bread sticks as I do for my rolls.

In a Pyrex glass mix in this order:

2 T SAF yeast
2 T sugar
1 cup warm water

In your mixer or large stainless steal bowl dump:

10 cups white flour (2 cups of this can be wheat)
1/2 cup sugar
1 T salt
Pyrex yeast mixture (should be doubled in size)
3 cups warm water
1/2 cup oil

mix on low for 2 minutes. If mixing by hand mix for about 5-7 minutes.

Let rise one hour in the bowl. No need to dirty the counter or another bowl.

Form bread sticks. This will make 2 loaves of bread and one large batch of bread sticks. Or 2 larges batches of bread sticks...or even 2 large batches of rolls. Be sure and grease your pans with shortening or use spray.

Let the formed dough rise for about 30 minutes. It depends on how cold or warm your house is. I like my bread sticks to rise into each other. Then brush your bread sticks with melted butter and sprinkle with garlic salt.

Bake at 375 for 20 minutes for rolls and bread sticks. Bread bakes for 30 minutes.

Pitta Bread


I have tried several different pitta and tortilla recipes. This is by far my favorite! They come out soooo soft and chewy. I served this up with pulled beef taco meat, cheese and lettuce. This kids like refried beans and cheese.
Combine in a bowl or mixer the following:
3 cups flour (I used 1/2 c wheat)
1, 1/2 T sugar
1, 1/2 t salt
1, 1/2 T yeast
Then add the following:
2T melted butter
1, 1/4 cup warm water
Knead by hand or on low for 10 minutes. It will be tacky.
Rise for one hour.
Then dump the dough on a floured surface. Cut with a knife into 8 peices (10 if you want them thinner).

Then let the pieces sit for 20 minutes.
Then roll out into 1/8 inch thick circles.
bake at 450 for about 5 to 7 minutes.

Mom's Bread




My Mom always makes her bread by hand. That's how I learned. I have tried several different roll recipes, but I always come back to hers because it is sooo easy, and requires little ingredients. I started this batch of rolls by rolling the dough into fancy shapes but then got rushed with the needs of children. I finished with just plopping the dough down in a circle.

In a Pyrex glass combine and let double:

2 T yeast
2 T sugar
1 cup warm water

While the yeast is rising combine in a large bowl or mixer the following:

10 cups flour ( I use 1 cup of wheat)
1/2 cup sugar
1 T salt

Then add the bubbly yeast mixture to the flour mix along with the following:

3 cups warm water
1/2 cup oil

mix by hand for about 5 minutes or with a mixer on low for 2 minutes.

Let rise till doubled. Divide into 2 loaves of bread and a giant batch of rolls. Let rise till doubled -about an hour.

Bake at 375 for 30 minutes. The rolls bake for about 10 to 20 minutes depending on how many you put on your cookie sheet. Brush melted butter over the rolls as soon as you take them out of the oven.
