Multi-Grain Breakfast Cookie


This cookie has it all - looks, taste, energy, chocolate, coconut... I did notice that the cookie begins to go stale after the second day. This is a good snack to eat after school or send with your child as they are getting on the school bus. If you are like my family, you eat breakfast at 7:00 and by the time school starts at 9:00 you are already hungry again! Enjoy another Ruby original!

Mix for 2 minutes, scraping the edges:

1 cup sugar
1 cup brown sugar
1 cup butter

Add and mix for 1 minute after each:

2 eggs
1 tsp almond extract

Add and mix fast until combined:

1/2 cup oat flour
1/2 cup wheat flour
2 cups white flour
1 tsp baking soda
1 tsp salt

Add and mix:

1 cup chocolate chips
1/2 cup coconut
1/2 cup sliced almonds

Bake at 375 for 10 minutes

Ruby if you really want to pack it in on nutrition...add 1 cup pureed white beans (yes beans) They make a cookie super moist, increase nutrition, and you can't even taste the bean flavor (plus for me they act as good binders for my egg free kiddos)-I'd add it with the first 3 ingredients. This is your cousin Lisa....I am looking on your recipe site for super???Age old question What do I fix for dinner??
